Directions
Preheat a flame broil or barbecue skillet to medium-high warmth.
Brush the two sides of the steak with the olive oil and season liberally with salt and pepper.
Brush the flame broil grates with oil. Place the steak on the barbecue and flame broil around 4 minutes. Flip the steak, top with the provolone cheddar and cut tomatoes, season with the crisp oregano, salt and pepper and sprinkle on the mozzarella cheddar. Cover and flame broil for an extra 3 to 4 minutes or until the point that the cheddar is liquefied and gurgling.
Expel from the barbecue and let rest for 5 minutes before cutting.

. 1 1/2 pounds flank or skirt steak
. 2 tablespoons olive oil
. Kosher salt
. Freshly ground pepper
. 1 cup shredded provolone cheese
. 2 medium vine-ripened or heirloom tomatoes, sliced
. 1 tablespoon chopped fresh oregano
. 1 cup shredded mozzarella cheese
